Gajar ka halwa, also known as gajorer halua, gajrela, gajar pak, and carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar, cardamom and then cooking while stirring regularly.
Ingredients:-
1 kg carrot
¼ cup ghee
10 cashew / kaju
10 almonds / badam
3 cup milk
¾ cup sugar
½ cup khoya / mawa
¼ tsp cardamom powder
Gajar Ka Halwa Recipe:-
Gajar halwa recipe can be made in different ways. the most common way is to cook the grated carrot in full cream milk and add mawa grate at the end. however, there are other variations and one of the popular variants is instant carrot halwa made with condensed milk. i have already posted the instant version but if you ask my personal opinion, i would recommend making it a traditional way by cooking it in full cream milk. with milkmaid, you may not get the same texture, creaminess, and also the melting taste in your mouth.
furthermore, i would like to highlight some tips, suggestions, and variations to the Gajar halwa recipe. firstly, in this recipe, i have used orange-coloured carrots as i do not have access to the red ones in australia. if you have access to those, you should always use it for gajar halwa recipe. secondly, i always recommend adding mawa at the end of the cooking process, once the milk starts drying out. also, i have added instant mawa for this recipe which should be handy enough, but you can also add store-bought one. lastly, in this recipe, i have added a ¾ cup of sugar for 1 kilogram of carrots. however, depending upon your carrot choice you may have to increase or decrease it. but the ¾ cup should be good enough
